Lisa's Sautéed Kale with Tahini Sauce


Today's feature is Lisa's delicious Sautéed Greens & Tahini Sauce. Bitter greens are great for cleansing the liver and increasing it's intelligence, and the tahini sauce gives an added warming and grounding element. Sesame seeds (from which Tahini is made), and Sesame oil are warming in nature, are filled with Calcium, and are excellent for grounding when you are over stimulated, over-whelmed, and over worried. Sesame is an incredible medicine for calming the nerves and for strengthening the teeth, digestive fire, and the bones. Sesame is also rejuvenating, improves memory and intelligence, and is good for increasing immunity!

In this thread I am sharing recipes from several of my close students who have been studying Ayurveda and Meditation with me over the years. They have been learning to live simply and in harmony with the rthymns of nature. As a result, their health has become stronger and their minds more joyful and positive. Lisa's Tahini Sauce

1 tsp cumin seeds, whole

1/2 tsp brown mustard seeds, whole

1/2 tsp black peppercorns, whole

1 tsp sesame oil

1 tsp turmeric powder

1 C tahini

1 C unsweetened, plain organic almond milk

Juice of 1/2 lime

Himalayan pink salt


Grind the whole spices in a mortar and pestle or spice grinder until they are a fine powder. In a small sauté pan, heat the oil over medium heat. Add the ground cumin, mustard seed, turmeric and pepper. Heat for a minute, stirring constantly to keep it from burning. Once the spices begin to darken and release an aroma, take them off the heat or they will quickly burn.

Now you will add the tahini and almond milk. Cook for three minutes, stirring occasionally. Once it has all incorporated and thickened a bit, remove from heat. Stir in the lime juice and salt.


This sauce is great on bitter greens, such as kale or dandelion greens, and will make their extreme bitterness more palatable. But, you could also use it as a dip or spread for steamed veggies or on a stir fry. Refrigerate the extra sauce and consume within a couple days.




Sautéed kale

1-2 TB Olive oil

1 bunch organic kale, stemmed and leaves cut into thin ribbons

Two finger pinch of both cumin seeds and coriander seeds (could use powders if prefer)

1/4 tsp turmeric powder

1/8 tsp ground pepper

1/4-1/2 C water

Tahini Sauce (recipe above)

Lime

Pink Himalayan salt



Heat the oil over medium heat. Add the cumin and coriander seeds. Once the mustard seeds start popping, add the turmeric and allow to lightly toast. Once the aroma releases, add the kale and water. Steam the kale, uncovered, for 5-7 minutes or until it is tender. Remove the pan from the heat. Squeeze some lime juice over the kale and sprinkle with salt.


Note: if you want to cook the kale stems they will need to be cooked for at least five minutes before you add the leaves. Plan to add more water than indicated to ensure there’s enough to steam the stems and the leaves.


Tahini can be a bit thick and heavy, so stir in just enough tahini sauce to lightly coat the greens-you won't want to weight them down too much!
