Perfect Spring Lunch~Coconut Greens
Our bodies are built on what we are imbibing. What did you put into your mouth today? AND, lunch is a very important meal, skipping it leaves us without vital nutrients and energy to traverse the day, it also leaves us too light and ungrounded. Prioritize your lunch and make it nutritious~small actions go a long way.
Here's a simple and delicious recipe for your lunch or dinner:
Head of broccoli 2 handfuls of local mixed greens Ghee 1/4 tsp cumin, coriander, fennel 1/2 tsp turmeric Juice of 1/2 lime 1 handful of fresh coconut flakes Soma Salt (white Himalayan salt) & pepper
Warm the spices in the ghee, add chopped veggies, after a few minutes add a small quantity of water so they can steam and so they don't stick to the pan, then add coconut flakes. mix well. When bright green in color, add salt & pepper to taste and garnish with the juice of freshly squeezed lime. You can eat an entire bowl if you want to! You will be satisfied because you will have experienced the 6 tastes and you won't be longing for more food.
