Ann's Spiced Zucchini “Half Moons”

Today is Day 11 of our thread on~HOW TO EAT SIMPLY TO IMPROVE YOUR OVERALL HEALTH & BUILD RESPONSIVE IMMUNITY~Today's Immune Boosting vegetable dish is Ann's Spiced Zucchini.


This is a series to follow up my previous posts on CORONA VIRUS: Tips for Self-Care and Redirecting Fear. All can be found on our website blog. I am only highlighting VERY SIMPLE veggie recipes in this series so that you will be inspired to focus your self-care towards that which is positive and uplifting. Watch for a daily post over the next two weeks!

In this thread, I am sharing recipes from several of my close students who have been studying Ayurveda and Meditation with me over the years. They have been learning to live simply and in harmony with the rhythms of nature. As a result, their health and overall well-being has become stronger and their minds more joyful and positive.


This is a very simple, but extremely powerful healing vegetable recipe that I recommend you keep in your meal rotation several times a week. Why? Because zucchini is a Somagenic food, this means it carries the healing medicine of the lunar energy. Soma (the vibrational energy coming from the moon) is watery, nurturing, connecting, building, cooling and supporting. Soma is the raw material of Ojas-the essential substance of our immunity. Ojas is our energy and immunity "cushion". When we have enough Soma we create less inflammation and acidity, we are able to sleep better, to have stronger immunity, we are more at ease, we are juicier, healthier, and all of our tissues (plasma, blood, muscle, fat, bone, nerve, reproductive) are able to develop into their fullest potential. Did you know that zucchini carried such a powerful medicine? And to think that here in the midwest where zucchini grows so abundantly in it's season, that we are literally trying to give it away because there is always more that we can eat. This plant even grows and reproduces with the Somagentic qualities of plentiful abundance; this is the juiciness and fullness of Soma in manifestation! Sometimes, people even leave zucchini in their neighbor's cars and on porches because the crops produce with such abundance, that you can't help but perpetuate it's nurturing generosity! As a result, we have come up with all sorts of things to do with this wonderful common vegetable. But, it is most nourishing in just this simple form-cooked lightly with Ghee and spices, and I recommend that everyone eat it on a regular basis, you will notice the difference in how you feel. This also applies to Yellow Summer squash. You can make it exactly the same way or combine the two as pictured below.


We are surrounded by natural medicine in so many forms. But, pure food is our first and foremost material medicine, and Zucchini is one of our best due to it's abundance of Soma. And, let's not forget, that in it's pure essence Soma is blissful joy, the primary quality and experience of our True Nature.

Ann's Spiced Zucchini “Half Moons”


Ingredients: 2 to 3 organic Zucchini 1 Tblsp Ghee or Olive oil 1/4 tsp Cumin

1/4-1/2 tsp Coriander

1/2 tsp Turmeric

3-4 finger pinch Fennel powder

2 finger pinch Fenugreek

4 finger pinch ground Black Pepper Himlayan Salt to taste Slice the zucchini length wise and then into one inch “half moon” pieces. Heat a skillet on medium high and add your choice of oil. Sometimes I use a little of each. Add spices and let a paste form, toasting lightly. Add the zucchini and toss to coat. Add salt and toss again.  Cover with a lid and let cook until the zucchini is just tender.  About 5 to 7 minutes.
