Stephanie's Easy Veggie Curry

HOW TO EAT SIMPLY TO IMPROVE YOUR OVERALL HEALTH AND TO BOOST YOUR IMMUNITY


This is a series to follow up on my previous post on CORONA VIRUS ~ Tips for Self-Care and Redirecting Fear. In this thread, I'm sharing recipes from several of my Ayurveda students and patients who have been dedicated to living simply & in harmony with the flow of nature. As a result, their health has become stronger and their minds more joyful and positive! I'm highlighting VERY SIMPLE veggie recipes so that you can try a new meal and be inspired to focus your self-care towards that which is uplifting.


Ingredients: 4 medium organic sweet potatoes, peeled and cubed 2 large heads organic cauliflower, broken into small florets 2 cans (~14 oz) organic coconut milk 1 tsp olive oil 1 tsp cumin seeds 1 tsp turmeric powder 1 tsp favorite curry powder water Himalayan salt


In a large pot, brown cumin, turmeric, and curry powder in olive oil on medium heat for a few minutes. Add veggies and 1 cup water. Bring to boil, reduce to simmer, cover and steam cook until desired tenderness is reached. Add small amounts of water as necessary. Then add coconut milk and if needed, add more curry to taste. Cook on medium until slightly thickened. Add Himalayan salt to taste. Serves 8
